Vegan Carrot Cake

What you need:

  • 220g Flour

  • 1 sachet baking powder

  • 150g SAGANÀ Coconut Sweetener

  • 2 tsp cinnamon

  • 1 tsp ginger

  • 1 tsp vanilla extract

  • 65g chopped walnuts

  • 100g raisins

  • 200g grated carrots

  • 100ml sunflower oil

  • 150 ml water

  • Grated zest of 1 large orange

Instructions :

Pre-heat oven to 160°C.

Mix together all the dry ingredients: flour, SAGANÀ Coconut Sweetener, baking powder, cinnamon and ginger and orange zest.

Chop the walnuts and add it to the mix.

Add the oil, water, vanilla extract, raisins and carrots. Mix everything together until well blended.

Place in a cake tray and bake in the pre-heated oven for about 45min-1h, depending on your oven.

To be sure, insert a toothpick into the center of the cake, it should come out clean.

Let cool in the pan for approximately 10 min.

Tadaaaa! It's ready and you can keep it sealed for about one week in a cool and dry place.
