Fig & Lemon Cake

What you need :

  • 180g flour

  • 100g butter

  • 100g Saganà coconut sweetener

  • 1 tsp baking powder

  • Zest and juice of 1 large lemon

  • 10 dried figs

Instructions :

Pre-heat oven to 180°C. Soften butter in microwave or over a warm water bath. Zest the lemon.

In a mixing bowl, cream together coconut sweetener, softened butter and lemon zest.

Add the eggs, then flour and baking powder. Beat until well mixed.

Lastly, squeeze the lemon and chop the figs into small pieces. Fold everything into the mix.

Pour the batter into a greased cake pan and bake for about 30-40min, until a toothpick inserted in the centre comes out clean. Enjoy!
