We have tried a vegan version of the traditional Carrot cake with our certified vegan coconut sweetener!
There are so many recipes for carrot cakes, but here is our own creation. Feel free to replace/leave out anything you don't like. For example, you can replace the walnuts with pecans if you prefer!
What you need:
  • 220g Flour
  • 1 sachet baking powder
  • 150g Saganà coconut sweetener
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp vanilla extract
  • 65g chopped walnuts
  • 100g raisins
  • 200g grated carrots
  • 100ml   sunflower oil
  • 150 ml water
  • Grated zest of 1 large orange
Mix together all the dry ingredients: the flour, Saganà sweetener, the baking powder, cinnamon and ginger and the orange zest
Chop the walnuts and add it to the mix.
Add the oil, water, vanilla extract, raisins and carrots. Mix everything together until well blended.
Place in a cake tray and bake in the pre-heated oven for about 45min-1h, depending on your oven (160°). To be sure, insert a toothpick into the center of the cake, it should come out clean. 
Let cool in the pan for approximately 10 min. Tadaaaa! It's ready and you keep it sealed for about one week in a cool and dry place.
